Crosby Fresh Hopped Pilsner
We're happy to release our second of two fresh hop beers this year -- Crosby Fresh Hopped Pilsner!
Crosby Fresh Hopped Pilsner is a 100% fresh hop beer brewed with freshly harvested Strata from @crosbyhops, then dry hopped with Crosby Amarillo CGX fresh hops!
In late August, we received 240 pounds of freshly picked Strata that were harvested and shipped overnight to Jester King. The Strata arrived in absolutely beautiful shape thanks to the excellent work of the team at Crosby in Oregon. The fresh Strata was bursting with bright notes of strawberry and citrus. We brewed a pale lager wort and converted our coolship into a giant hopback for the Strata. We then whirlpool with more fresh hop Strata.
After primary fermentation with lager yeast, we added Crosby Amarillo CGX fresh hops as a "wet hop, dry hop." We'd never had the experience of adding fresh hops on the cold side, so this was a lot of fun for us to try!
After another six weeks of patient refinement through lagering, we packaged Crosby Fresh Hopped Pilsner into kegs and cans, which we've begun self-distributing around Texas! Look for it at a location near you in Texas, or find some at Jester King open 7 days a week!

moreQR Code Ordering is Back
We're happy to announce that QR code ordering is back at Jester King. Starting this Friday, our guests can order food and drink at any bar or QR code. It's that simple. Order whatever you'd like in person or from any QR code on our ranch.
We started QR code ordering back in 2020, which helped shorten lines. People seemed to like them. We understand that people come out to Jester King to enjoy great pizza and beer in a beautiful place while getting to spend disconnected, quality time with friends and family. We care deeply about our food and beer, but we see helping create enjoyable, disconnected time with friends and family as our core purpose for existing. Waiting in line too much obviously defeats all that. With QR codes, even if we're very busy on a beautiful Saturday afternoon and pizza times are long, at least folks can get a quick beer and enjoy the company of their friends from their table instead of waiting in line to order.
Why did we move away from QR codes earlier this year? We don't love the impersonal nature of them and having to interface with a device. Service and hospitality are important to us, and a lot of love goes into our food and beer, so we felt the Jester King experience was suffering due to the lack of personal connection. But like most things, one extreme or the other isn't great, and we're back with a hybrid — order at any bar in person or by QR code.

moreOH! - An Otoko Collaboration Beer
We're honored, excited, and grateful to announce the release of OH! — farmhouse ale with Sansho pepper brewed in collaboration with Chef Yoshi Okai of Otoko in Austin.
We've been enormous fans of Chef Yoshi for the last several years. His culinary combination of restraint, subtlety, artistry, and creativity is very special, and he's a really friendly, down to Earth person on top of it.
For OH!, we felt a duty to create flavors and harmony that would meld with his cuisine. To this end, we took Chef Yoshi up on his suggestion to use Sansho pepper, a common element in his cooking. From there, brewing and achieving balance with OH! was an exercise in restraint. We were tempted at multiple points throughout the creative and brewing process to add more ingredients and boldness of flavors. But in the end, throughout several test blends, we found a beer we believe beautifully integrates fermentation character, crisp Texas malt flavor, and a subtle floral/fruit character from the Sansho pepper. We're proud and excited to see OH! paired alongside Chef Yoshi's outstanding cuisine at Otoko!
Apart from Otoko, be on the lookout for OH! at Jester King and in some places abroad given limited distribution. Finally, a special thank you to Chef Yoshi and his team at Otoko for the opportunity to collaborate with them. They curate a special experience and are even better people!
moreGrim Harvest
Our 2023 batch of Grim Harvest — farmhouse ale with blackberries — is now available at Jester King.
For Grim Harvest, we brew fresh wort with Hill Country well water, west Texas barley and wheat from TexMalt, fresh and aged hops, then ferment it on the blackberries from Nocturn Chrysalis (barrel-aged wild ale with blackberries). This second "maceration" of the fruit yields a more subtle fruit character, with elements of the base beer coming through more prominently. This blackberry farmhouse ale is mildly tart, effervescent from bottle conditioning, and has a present but restrained fruit character. It's an authentic representation of Texas farmhouse ale tied to time, place, and people.

We're releasing our 4th batch of Moderne Dansk!Moderne Dansk is our barrel-aged wild ale refermented with Danish Stevnsbær cherry juice from Frederiksdal Kirsebærvin in Denmark.
The character of the Stevnsbær cherries is one of our favorite sensory experiences. The aroma is almost unreal. We created a nice, soft blend of pale/golden wild ale aged in oak barrels for about a year, then re-fermented the cherry juice with the beer to complete dryness. The interplay between Hill Country well water, Texas grain, aged hops, native yeast, and Stevnsbær cherry juice creates a beer that's highly unique to the terroir of Texas and Denmark.

moreReturn to In-Person Ordering
We're excited to announce that as of this week, we're fully back to in-person ordering of food and drink at Jester King. This is the way it was at Jester King from 2011 to 2020, and we're glad to get back to our roots. Why? While QR codes can be helpful, we miss being able to talk about and present our farmhouse ales and wood-fired pizza to our guests in person. We put a lot of love and connection to place into what we do with local grains, wild yeast, and ingredients from Texas farms, and we feel a bit of what makes these things special get lost in the impersonalism of a QR code/screen.
But what about long lines? This was a knock on us prior to QR codes. Today, we're different in that we now run four bars (Pasture, Brewery, Pizzeria, Goat Pen), have our own food truck (JK Kwik Kitchen) to complement our pizza, and can our beer now so we can offer cold cans quickly. Technology has improved too from back when we used to write names and numbers on pizza boxes by hand. We think you'll find our onsite experience for ordering food and drink pretty smooth and fast.
We've always seen Jester King as a beautiful place to enjoy food and drink tied to time, place, and people with friends and family. Ditching screens and connectivity for a bit is something that's part of this. We're happy to be taking a step back in this direction and hope you like it too. Come out and check it out starting this Thursday.

Our annual Star Party is back!
There are very few places that have dark, open night skies perfect for stargazing and we are happy to be one of them. Join us at The Hall at Jester King on Friday, April 21 from 5:30-10pm alongside the Hill Country Alliance for an evening of observation and exploration into our night sky.
A panel of esteemed voices from the ATX astronomy community will discuss the impact of astronomy in the Hill Country, what observatories in the area have been working on, night sky preservation, and much more! After that, you can stargaze, chat with panelists, browse tables & activities, and check out the planetarium dome from Stars and Science Austin where you can view their Sky Tonight and Losing the Dark programs.
There will be plenty of telescopes to look through with guides to help viewers navigate the night sky, but feel free to BYOT (bring your own telescope)!
We will have food and beer available for purchase.

Landive
We're excited to release a new dry-hopped farmhouse ale re-fermented with fresh lime juice, grapefruit juice, and wildflower honey called Landive!
Landive falls in line with our long tradition of making dry, drinkable, low-to-medium strength farmhouse ales with interesting fermentation, fruit re-fermentation, and dry hop flavors / aromas. We brewed with Hill Country well water, Texas malted barley and wheat, and Sabro hops. We re-fermented with Texas wildflower honey, lime juice, and grapefruit juice, then dry hopped with Citra, Sabro, and Mosaic Cryo. The result is a delicious meld of citrus, honey, tropical hop aroma, and authentic farmhouse ale.

"I tried Nocturn Chrysalis on my very first visit out to Jester King in 2016 and it completely changed what I thought about farmhouse beers and fruited sours. I had only started getting into funky barrel aged and mixed culture beers and prior to that most sours just tasted like sugar and heartburn to me. Nocturn, however, wasn't overly sweet or cloying, the acidity was balanced and not puckering, and the combination of being both jammy yet subtle totally changed my mind. Blackberries are my favorite and as I kid we used to pick them wild in the woods at my grandparents' house.
Today my grandpa still grows tame berries in the back yard and even though he's never been much of a drinker, he gets very excited when I visit and the Nocturn gets busted out. Last time I visited, he was fascinated by the process of how the beer is made, how I chose the barrels, and learning about the farm in Oregon where we source the Marionberries that go into it. He waits until he thinks everyone has a little pour and then he tries to sneak a little extra into his glass. He's never really been much of a drinker so it's freaking adorable."
more2022 Estival Dichotomous
For our 2022 Estival Dichotomous beer, we made a farmhouse ale with grilled peaches, cardamon, and cinnamon. Our Dichotomous series of seasonal saisons seeks to capture the character of the season in which they're brewed. "Estival" is our summer version.
The peaches were grown last summer at Vogel Orchard in Fredericksburg, Texas. We de-pitted them and grilled some of the peach flesh on a flat top grill & others over an open flame with oak, getting them golden brown with a little bit of char around the edges. We then added them to some young beer and let them re-ferment to dryness. Right before bottling, we added cinnamon sticks and ground whole green cardamon seeds to the beer to taste. We finally naturally conditioned in bottles and kegs.
The natural flavor of the Texas peaches with the caramelization and char, plus the savoriness of the cardamon and cinnamon play nicely together with a young, fresher farmhouse ale base. We hope you enjoy 2022 Estival Dichotomous!

2022 Feral Dampf
For the second time ever, we're releasing a batch of Feral Dampf — our farmhouse Dampfbier brewed in collaboration with Local Option in Chicago, Illinois.
Feral Dampf is a play on a beer made by Local Option called Dampf Loc, which is inspired by the centuries-old, Bavarian tradition of Dampfbier. Literally meaning “steam beer”, Dampfbier was known for producing lots of foam or krausen during fermentation, which made it appear as though the beer were boiling or steaming.
For Feral Dampf, we brewed a medium strength beer with well water, Texas grain, and a light dose of organic Fuggle hops. We chilled the wort overnight in our coolship, then primary fermented it in stainless steel with our mixed culture, we then aged it in neutral oak barrels for about six months. Finally, we naturally conditioned it in bottles and kegs.

We love brewing hoppy farmhouse ales (arguably our favorite thing to make), and up until now we haven't done one with exclusively New Zealand hops.
So we're happy to introduce Jester King Bird Bump — hoppy farmhouse ale brewed with New Zealand Motueka, Rakau, and Nelson Sauvin from our friends at Freestyle Hops. The fruity, tropical character of the hops melds really well with the fermentation profile from our mixed culture. Aside from that, the beer is rounded out by our well water and native Texas grains. Naturally conditioned in kegs and 750ml bottles.

On Doom Forge Day this Sunday, 1/22, get your photo taken with our doom metal goats. Suggested donation of $10+ to the SIMS Foundation and our photographer will take a professional photo with you and a group of our goats in the triangle garden. Garden located next to the Pole Barn and Kitchen. Photos from 12pm-3pm. Photos will be available for download on this page starting January 25th.

Marcus will provide insight into his passion for imperial stouts and the process behind these big and bold malt bombs. We'll also be serving up sweet desserts from Mattie at Jester King Bakery.

Our latest batch of Jester King Gotlandsdricka is out now!
Gotlandsdricka, meaning "Drink of Gotland", is a farmhouse ale brewed with smoked malt, juniper, and myrica gale. It's inspired by the Scandanavian farmhouse brewing tradition. Gontlandsdricka is fabled to be the beer of the Vikings. Rudimentary malting techniques would likely have lent a smokey character to the beer and other plants besides hops (such as juniper and gale) were used for bittering.
Jester King Gotlandsdricka was fermented in stainless steel with our mixed culture of brewers yeast and wild yeast. It was naturally conditioned in kegs and bottles.

Our next blend of Jester King Viridium is out today!
Viridium is a blend of mature Jester King SPON with a special coolship brew in 2019 with toasted yaupon, juniper, and rosemary. We foraged the herbs from the land around Jester King, added them to our coolship, and let the herbs steep in the hot wort overnight. We then spontaneously fermented the herbal wort in oak barrels and allowed it to slowly mature over a few years. We then blended to taste with mature Jester King SPON.
The result is a highly unique, wonderfully aromatic blend of spontaneous beer that is tied to time, place, and people at Jester King.

Black Metal, a.k.a. Iron Sword, a.k.a. Blackened Death, a.k.a. Suds of Northern Darkness, a.k.a. El Martillo del Muerte, is a cruel and punishing beer fermented by the sheer force of its awesome will.
Brewed with Hill Country well water, Texas-grown pale malt, British caramel, brown, and chocolate malts, and Belgian candi sugar and fermented in with British yeast. 9.3% alcohol by volume.

moreMad Meg Farmhouse Provision Ale
After a long hiatus, we're happy to release a new batch of Jester King Mad Meg Farmhouse Provision Ale!
Mad Meg is a Franco-Belgian inspired "bière de provision," which means beer for keeping or storing. Provision ales were typically higher in alcohol and cellared for longer periods of time than their lower abv counterparts. Jester King Mad Meg is a simple beer with well water, Texas barley and wheat, and organic Fuggle and Perle hops. It was fermented in stainless steel with our mixed culture of brewers yeast and wild yeast, then naturally conditioned in kegs and 750ml bottles.
The name “Mad Meg” refers to a peasant woman from Flemish folklore, also known as “Dulle Griet” or “Dull Gret,” who leads an army of women to pillage hell. She’s famously depicted in Pieter Brueghel the Elder’s 1562 painting by the same name.

We're excited to release our 2022 batch of Commerical Suicide English-Style Dark Mild. It was brewed to style with Golden Promise, Biscuit, Caramel, and Chocolate malts and East Kent Golding hops. We fermented in stainless steel with English yeast.
Commercial Suicide was actually the first Jester King beer ever released in 2010. We called it Commercial Suicide because the beer effectively had no audience. We considered it too dark for macro beer drinkers and too low alcohol for beer geeks. Thankfully, there's enough audience for Commerical Suicide to bring it back annually. We hope you enjoy the 2022 release.

We're pleased to announce the release of 2022 SPON Three Year Blend tomorrow, 12/10 starting at 11am CT (onsite only)!
2022 SPON Three Year Blend is a blend of 100% spontaneously fermented beer from our 2021, 2020, and 2019 coolship seasons. Taking inspiration from authentic Belgian Gueuze, our aim is to follow a time-honored, classical method developed overseas, but with our own well water, Texas grain, aged hops, and native yeast to make a beer inextricably linked to a time, place, and people.
2022 SPON Three Year Blend was brewed with Trinity Aquifer well water, Texas malted barley and raw wheat, aged hops from our barn, and native yeast from the land and air around our brewery. It's component parts were aged at Jester King in oak puncheon barrels from one to three years. After blending, it was naturally conditioned through re-fermentation in bottles and kegs.
2022 SPON Three Year Blend is our 7th blend following the original release of 2016 SPON Méthode Gueuze. The coming winter of 2022-23 marks our 11th coolship season. We began in 2013 with a curiosity and desire to see if spontaneous fermentation would be possible in Texas. We were pleased to learn that it was and that our own agriculture and microclimate would naturally produce a beer unique to a time, place, and people.

Bug Farm is our farmhouse ale with rosemary, lavender, and spearmint, re-fermented with watermelon. We brewed the base beer with Trinity well water, TexMalt Llano Pilsner, malted wheat, raw wheat, and organic Perle hops. We fermented in stainless steel with JK mixed culture, added rosemary, lavender, and spearmint to taste, then re-fermented with over two tons of fresh watermelon hand-processed at Jester King.
Mixed culture fermentation of fresh watermelon creates one of our favorite flavor profiles, which makes Bug Farm a house favorite at Jester King. Unfiltered, unpasteurized, and naturally conditioned.

Today we're releasing Batch 2 of Urban Mutation, our collaboration with Other Half Brewing Company in Brooklyn, New York!
Batch 2 was brewed with Trinity well water, TexMalt Llano pilsner and Denton County wheat, flaked oats, organic Perle hops, and Texas wildflower honey. We added more wildflower honey to the fermentation, along with a dry hop of New Zealand Motueka and Rakau. Unfiltered, unpasteurized, naturally conditioned.

We're excited to release Gin Barrel-Aged Nocturn Chrysalis Batch 3 on Black Friday!
To make Gin Barrel-Aged Nocturn Chrysalis, we brew farmhouse ale with well water, Texas grain, and fresh and aged hops. We primary ferment in stainless steel with our mixed culture, then age the beer in neutral oak for about a year. We then create a blend and add a very high ratio of Marion Blackberries (6 pounds per gallon) to the beer. We let the blackberries ferment to total dryness, then rack the beer to gin barrels for nine months.
This double-barrel aged, fruit re-fermented beer is what we call Gin Barrel-Aged Nocturn Chrysalis. This is only our third release ever, so we hope you enjoy! moreAcerose Efflorescence
Introducing Jester King Acerose Efflorescence! This is a collaboration with our longtime friends at Novare Res Bier Café in Portland, Maine. Acerose Efflorescence is a bière de coupage (young beer cut or blended with mature spontaneous beer) of fresh Belgian-style Blond Ale and mature Jester King SPON.
The Belgian-style Blond Ale was brewed well water, malted barley and wheat, and Adreena hops from Roy Farms in Washington. After primary fermentation, it was blended with mature SPON beer from our barrel room. The blend was naturally conditioned through re-fermentation in the keg/bottle and allowed to develop harmony/complexity over three months prior to release. One of our favorite techniques is seeing how the flavors, aromas, and microorganisms in the mature spontaneous beer influence the character of the young beer. The results are usually very "old world" in nature and quite enjoyable.
Special thanks to Novare Res Bier Cafe for working with us, particularly Shahin Khojastehzad and Mike Fava. Novare Res has not only been a great supporter of Jester King over the years but has also influenced our brewing philosophy by curating a fantastic lineup of many of the world's best beers.

Our latest batch of Jester King DDH IPA is out today. It's a West Coast Hazy IPA brewed with Texas-grown malted barley and wheat, flaked oats, and Idaho 7 and Mosaic Cryo hops. It was fermented with California Ale yeast and dry hopped with more Mosaic Cryo and Citra Cryo.

We're happy to announce the return of Jester King Biere de Lenoir!
Biere de Lenoir is barrel-aged wild ale brewed with well water, Texas grain, and a blend of fresh hops and aged hops from our barn. It's fermented with our mixed culture and aged in neutral oak wine barrels. After about a year of maturation, it was re-fermented with a very high ratio (fruit to beer) of Lenoir (aka Black Spanish) grapes from Sulphur Bluff, Texas. After re-fermentation, we naturally conditioned the beer in bottles and kegs.
This is only our second-ever batch of Biere de Lenoir. We were thrilled with the quality of the 2022 Lenoir harvest. The grapes were inky black and full of jammy flavor. We brewed a simple wort with Weyermann Pilsner Malt and Hallertau Mittelfruh hops. Primary fermented with pure culture German lager yeast and lagered for eight weeks prior to filtration and packaging. Clean, crisp, drinkable, and refreshing.

We're excited to announce our latest IPA — Jester King Star Party!
Star Party is both kettle and dry hopped with Comet, Apollo, and Galaxy hops and fermented with Star Party yeast from Omega Yeast Labs. The Star Party strain is a "Thiolized™️ version of the beloved Chico strain...with aromas of passion fruit, dank pink guava, and citrus zest." We get big Tiki, limeade, and mango notes from Jester King Star Party IPA.

Today we're releasing a more recent favorite of ours — Hoppy 6 Grain Saison!
This beer is fairly new (batch 2), but it relates back to the origins of farmhouse ale at Jester King. Mineral-rich water, combined with a rustic malt character, herbal/spicy hoppiness, and wild fermentation is our main calling card. To achieve a rustic malt character, we brewed with malted barley, rye, spelt, and wheat, naked oats, and unmalted purple corn. We kettle and dry hopped with organic Perle and Fuggle hops from The Oregon Hophouse and fermented in stainless steel with our mixed culture. Unfiltered, unpasteurized, and 100% naturally conditioned in bottles and kegs.
Hoppy 6 Grain Saison hits the mark for us in terms of what we believe is classic farmhouse saison character, so we hope you enjoy!

Today we're releasing our 2022 batch of Jester King Colour Five!
Colour Five is our barrel-aged wild ale re-fermented with Texas blueberries grown at Echo Springs Farm in Murchison, Texas near Dallas. We love fermenting them with our barrel-aged beer because the blueberries are highly aromatic (think blueberry yogurt) and mild in acidity. The result is a highly drinkable beer bursting with jammy aromas.
This is our 7th batch. Be on the lookout for a batch of Demitone down the road, which uses the blueberries from Colour Five. Unfiltered and 100% naturally conditioned.

moreDDH IPA – Hazy West Coast IPA
Our latest batch of DDH IPA was canned this week! For this batch, we were inspired by our friends at Cellarmaker Brewing Company in San Francisco to brew a Hazy West Coast IPA. We brewed a Hazy IPA wort and fermented it with California Ale yeast.
The wort was brewed with Wildfire Pale Malt, San Jacinto Two Row, and Denton County Malted Wheat from TexMalt, flaked, oats, Idaho 7 and Sabro. We dry hopped it twice with Galaxy, Citra, and Mosaic Cryo. It was canned this Tuesday. Drink fresh.

分 桃 (Fēn Táo) batch 9 is now available!
First released in 2014, Fēn Táo is our barrel-aged wild ale re-fermented with fresh Hill Country peaches. We love the juicy, highly aromatic character of the peaches from the Texas Hill Country. They're one of our favorite fruits to ferment, and we love showing off the Hill Country terroir. Peaches are June Gold and Texas Royal from Vogel Orchard in Fredericksburg, TX.
We process the peaches by hand by removing the pits and macerating the flesh. They go into an oak foudre and are blended with mature, barrel-aged wild beer. We let the wild yeast in the beer and on the skin of the peaches ferment the blend to complete dryness with virtually no residual sugar. We then naturally re-ferment with beer through bottle/keg conditioning.
The result is a highly aromatic beer that shows off the sweet aroma and tangy taste of Texas Hill Country peaches. We see it as one of the most original and terroir-driven beers we make with well water, Texas grain, native yeast, and peaches from down the road from Jester King.

Our 2022 batch of La Vie en Rose is here!
La Vie en Rose is a farmhouse ale re-fermented on the raspberries from Jester King Atrial Rubicite. The ratio of fruit to beer is very high for Atrial Rubicite (6 pounds per gallon), so La Vie en Rose has a lot of fruit character even though it's from the second re-fermentation of the raspberries. It's unfiltered, unpasteurized, and naturally conditioned. The effervescence from bottle conditioning of the 2022 batch is lower at 1.6 volumes of CO2, but we don't feel this impacts the enjoyment of what's a very fruit-forward, wine-like beer. Enjoy!

Back just in time for Fall is Wytchmaker Rye IPA!
First released at Jester King in October of 2010, Wytchmaker is brewed with Texas-grown San Jacinto Two Row and Wildfire Pale Malt from TexMalt, malted Rye, and oats. It's kettle hopped with Citra and El Dorado and dry hopped with Simcoe, Amarillo, Citra, and Mosaic Cryo. We fermented it in stainless steel with Imperial A38 Juice yeast.
It's super fresh, hoppy, and delicious, so we hope you enjoy it this Fall season!

We're very excited to announce the return of one of our all-time favorite beers at Jester King — Synthesis Analogous!
2022 Synthesis Analogous is a blend of Jester King La Vie en Rose (made from the raspberries from Atrial Rubicite) and Jester King Grim Harvest (made from the blackberries from Nocturn Chrysalis) aged in whisky barrels from our friends at Balcones Distilling in Waco, Texas. We love the rich character the Balcones whisky barrels impart on this elegant blend of fruited farmhouse ales. We're grateful to have them up the road from us and to get to work with their barrels so frequently!
La Vie en Rose was aged in Balcones barrels for a little over a year and Grim Harvest was aged in Balcones barrels for about six months. We hope you enjoy this rare appearance of Synthesis Analogous, which we've now only released three times in thirteen years!

Back in July when it was blazing hot in Texas (it's the first day of Fall and it's still hot), we got the idea of making a nice, light refreshing farmhouse ale inspired by a Shandy cocktail we were serving. We came up with a recipe using lemon peel and ginger root, and we called the beer "100°" to coincide with some cool label art designed by Jester King Artist Katie Ross. In true Jester King fashion given the time it takes to make and condition our beer, 100° is being released just when there's a glimmer of nice weather ahead. But it's still a delicious beer we're excited for you to drink.
100° is a farmhouse ale brewed with well water, San Jacinto Heritage Malt and Denton County Wheat Malt from TexMalt, organic Perle hops from The Oregon Hophouse, dried lemon peel, and ginger root. It was fermented in stainless steel with a mix of farmhouse yeast and native yeast, then naturally conditioned in bottles and kegs.

Fantôme del Rey
We're happy to announce the re-release of Fantôme del Rey — farmhouse ale brewed with Belgian candi sugar, coriander, black peppercorns, & truffle honey in collaboration with Brasserie Fantôme in Soy, Belgium. We first brewed Fantôme del Rey with the legendary brewer Dany Prignon on a trip to Belgium in 2014. We then re-brewed it at Jester King in 2016. Six years later, we're excited to release it once again.
Fantôme del Rey was brewed with Hill Country well water, Texas-grown barley and wheat malt from TexMalt, organic Fuggles hops, Belgian candi sugar, coriander, and black peppercorns. It was fermented in stainless steel with our mixed culture, then re-fermented with truffle honey. We naturally conditioned it for four months in green bottles. We hope you enjoy this project of spontaneity that originally sprang to life on a trip to visit one of our inspirations eight years ago!

Goats play a big part in that land restoration, says Lissa Rowe, a veterinarian turned goat shepherd at Jester King. She and Farmer Phil Green manage 68 Nigerian Dwarf goats whose job it is to eat less helpful vegetation and return rich organic matter to the land, so native plants can flourish.
Regenerative agriculture and fine fine beer. What more could you ask for? How about wine? Farmer Phil is cultivating grapevines on the property since Jester King treats beer and wine as close cousins, barrel aging beers, refermenting with local seasonal fruits, and now, trying their hand at grape-based spirits too.

Cantillon Zwanze Day 2022
Announcing Cantillon Zwanze Day 2022 on Saturday, September 24th! Zwanze Day is when Brasserie Cantillon in Brussels, Belgium simultaneously releases a special beer at a select group of locations around the world. We're honored and grateful to be one of the locations this year. Here's Cantillon's description of 2022 Zwanze:
“This year’s Zwanze is a two-year-old Lambic blend with black pepper. For this year’s beer, we worked with Sandrine from Misao: La Maison des Poivres here in Brussels.
Sandrine had us try various types of Congolese pepper, and we eventually decided on one called poivre de Gorilles.
This pepper grows wild in the forests of the Republic of the Congo. Aromatic, but not too spicy, it blends beautifully with the refreshing acidity of our Lambic. The result is a beer that will pair marvelously with meat or fish.
The name poivre de Gorilles comes from the area where it grows, in Likouala Forest, located in the northeastern region of the Republic of the Congo. This forest is home to a significant population of Lowland gorillas – a species in danger of extinction. That’s why we’ll be donating a portion of the profits from the event to Gorilla, an organization that works to protect these Great Apes. Santeï !!“
more2022 Pink Boots Hoppy Pilsner
For this year's Pink Boots Collaboration Brew Day, we brewed a hoppy pale lager with the 2022 Pink Boots hop blend. The blend consisted of 30% Idaho Gem, 20% HBC 630, 20% Talus, 20% Triumph, and 10% Loral. We added the blend during the boil and again as a dry hop. Lagered for eight weeks prior to packaging.
100% of the proceeds from our Pink Boots Collaboration Brew Day will be donated to the Pink Boots Society's scholarship fund. "Pink Boots Collaboration Brew Day is an international celebration of women in the alcoholic and fermentable beverage industry. Each year, teams brew beer in participation of Collaboration Brew Day to help raise funds for Pink Boots scholarships that support our mission to assist, inspire, and encourage the professional development and education of women in our industry."

We have a new fruit re-fermentation being tapped this week featuring raspberries, blackberries, and cherries. The fruit came from SPON Raspberry & Cherry and SPON Blackberry & Cherry released earlier this year. It's a draft-only release that's only available at Jester King.
The process was pretty simple. We brewed a medium-strength farmhouse ale with well water, Texas-grown grains, and a blend of fresh and aged hops. We racked the wort onto the fruit and primary fermented to total dryness. Unfiltered and naturally conditioned in kegs. 5.1% abv. Purchase a glass at Jester King this Wednesday through Sunday.

Farmhouse Cider

Last fall, we received Arkansas Black apples grown in Arkansas, pressed them in-house at Jester King, and fermented the juice in stainless steel with our mixed culture. We aged the cider in stainless for seven months, then bottle conditioned for another two months. The result is dry, tart, crisp, effervescent, and refreshing with bright apple and fermentation flavors and aromas. 6.9% abv.

more2022 Modern Science
We're happy to announce the return of Modern Science, our foudre-fermented farmhouse ale brewed with aged hop plasma and re-fermented with Texas Hill Country peaches! It's our collaboration with New Image Brewing Company in Arvada, Colorado.
Our friends at New Image bring the science surrounding hops to a new level. They've experimented with isolating hop terpenes and plasma through supercritical CO2 extraction. We thought it would be interesting to combine something as old-world as aged hops with something as new-school as supercritical CO2 extraction. We added the aged hop plasma hot-side during the whirlpool, then fermented in an oak foudre with our mixed culture of brewers yeast and native yeast and bacteria. After a few months of maturation in oak, we re-fermented the beer with freshly-picked Texas Hill Country peaches. As always, we hand-processed the peaches in house at Jester King. As we've proudly exclaimed over the years, Hill Country peaches are some of the best we've ever encountered, and we're grateful to get to use them. We're especially grateful since this year's peach harvest in the Hill Country has been smaller than normal.

Happy International Beer Day! We're excited to announce the return of Bitter Death -- our Extra Hoppy Belgian-Style Pale Ale. For our second batch, we've packaged it in 16oz. cans in addition to draft.
Dry, bitter, drinkable, low-to-moderate ABV with some interesting fermentation character — that's a key mantra of ours when it comes to beer. And that's what Bitter Death is all about. We brewed a 5.0% abv pale beer with San Jacinto 2-row malted barley and Denton County wheat malt from TexMalt, Perle, Hallertauer Mittelfrüh, and Tettnanger hops. We fermented in stainless steel with Antwerp yeast from White Labs, as we really like the clean, crisp character we get from it with just a background note of fruity esters. After fermentation we dry hopped with more Hallertauer Mittelfrüh and Tettnanger. The result is beautiful, drinkable blend of herbal bitterness, crisp-cracker malt, and soft, mellow, subtle Belgian yeast character. This is definitely a beer profile we like to drink at Jester King, enjoy!

We're very excited to release our third wine from the 2021 grape harvest — our 2021 Red Blend. 2021 Red Blend is part of our Have We Met? series of wines. It features Texas-grown Black Spanish, Merlot, and Syrah grapes from Sulphur Bluff, Texas east of Dallas.
The grapes were harvested in August of 2021, crushed, and fermented in stainless steel at Jester King with the same mixed culture we use to ferment our farmhouse ales. We then sent the wine to neutral oak barrels for nine months. This June, we blended and bottled without the addition of sulphites. Our 2021 Red Blend is just grapes and our mixed culture. 9.7% abv. We hope you enjoy this authentically Texas wine from Jester King!

Our Kölsch was brewed as close to style as possible with softened well water, Texas-grown pilsner malt from Tex-Malt, Munich malt, and organic Perle hops. We fermented in stainless steel with Kölsch yeast, lagered for three weeks, filtered, force carbed, and packaged exclusively in kegs. 4.6% abv.

moreEnglish-style Summer Ale
We're excited to release the next English-style beer we've brewed at Jester King — English-style Summer Ale. While English beers are by no means our focus, we love brewing and drinking them. The complexity packed into relatively small beers, the blend of herbal hops and fruity esters, the drinkability, and the pub culture surrounding them make English-style beers among our most favorite.
For the hottest time of year, we brewed a simple, drinkable, golden English-style Summer Ale. The recipe was remarkably simple with "Burtonized" water, Golden Promise base malt, a touch of Caramalt and malted wheat, and East Kent Golding hops during the boil and in the whirlpool. We fermented in stainless steel with West Yorkshire yeast. Unfiltered, unpasteurized, 3.5% abv.
Most of the batch was force carbonated and packaged in cans and kegs. However, we filled a handful of firkins that will be served at Jester King using a traditional beer engine sometime in the next few weeks, so please be on the lookout!

2022 Vernal Dichotomous out now — our farmhouse ale inspired by the Central Texas spring season.
For this year's batch, we kept the recipe quite simple. We created a blend of farmhouse ale aged in oak barrels, then re-fermented the blend with sencha green tea. We sought to capture some of the herbaceous, earthy, floral character of the season in the form of a farmhouse ale. Like all our Dichotomous beers, they are created during the season for which they are named, and often are released well after the season has changed. 2022 Vernal Dichotomous is unfiltered, naturally conditioned, dry, mildly tart, with beautiful fermentation-driven aromatics. 5.5% abv.

We're excited to release our 2021 batch of Biere de Coupage! Biere de Coupage is a dry-hopped blend of fresh, hoppy farmhouse ale and mature, barrel-aged SPON. "Biere de Coupage" simply means beer that is cut or blended. We learned about the practice of blending young beer with old from the Franco-Belgian farmhouse tradition, and we adopted it into our beer making about a decade ago. We enjoy seeing how the microflora from the mature SPON takes the young, fresh beer in new and exciting directions.
In this case, we're just now releasing our 2021 batch/blend (originally blended in August 2021). Somewhat expectedly, the blend developed "ropiness". When this happens, the flavors and aromas remain in good shape, but the texture of the beer develops a slickness or viscosity. This phenomenon is attributed to the souring microorganism pediococcus in the blend. The good news is that ropiness goes away on its own after nine to twelve months of aging. In our experience, the beer usually emerges from the ropiness phase in really excellent shape, with some of the most harmonious fermentation characteristics we've experienced. The confluence of fresh dry-hops, mature SPON beer, bottle re-fermentation, and eleven months of patience results in what to us is truly a special beer.
more2022 Das Wunderkind
We're happy to announce the release of our latest batch of Das Wunderkind! Blended Saison.
Das Wunderkind is one of our oldest beers and one of the first to incorporate mature, barrel-aged wild beer. Back in November 2021, we brewed a young, fresh, hoppy farmhouse ale, blended it with mature, barrel-aged wild beer, then gave the blend a fresh dry hop of El Dorado, Motueka, Meridian, and Simcoe. We then naturally conditioned the blend for eight months in the bottle, during which the beer went through a period of ropiness. After bottle maturation, the beer is presenting bright and tropical with crisp, tart acidity and pungent guava and passionfruit flavors and aromas. The combination of time, pressure, and native yeast has a beautiful ability to unlock bold flavors from the dry hops, yielding some of our favorite farmhouse ale. 5.0% abv.

We're excited to announce the release of 2022 Balcones Bourbon Barrel-Aged Moderne Dansk!
We created a blend of mature farmhouse ale aged in neutral oak wine barrels for about a year, re-fermented the blend with Danish Stevnsbær cherry juice from the renowned Frederiksdal Kirsebærvin, then barrel-aged the blend for another year in Bourbon barrels from our friends at Balcones Distilling in Waco! This two-year-old project involved natural ingredients from our land and state (well water, Texas grain, native yeast), juice from our favorite cherries in the world, and decadent Bourbon barrels from one of the best distillers around. The results are quite special in our opinion. We hope you enjoy!

We're excited to release Batch No. 9 of Omniscience & Proselytism! Omniscience & Proselytism (or "O&P") is our blend of mature, barrel-aged farmhouse ale, re-fermented with fresh-picked strawberries from KH Farm in Poteet, Texas!
Our core philosophy is taking the natural ingredients around us (aquifer water, Texas grain, local produce, native yeast) and presenting them through the "magic" of fermentation. Fermentation has a unique ability to create new and exciting flavors and aromas through a natural process that's impossible to exactly reproduce. Seeing for instance how the seasonal harvest of Hill Country strawberries presents each year after transformation through fermentation is one of the things we find most exciting and look forward to the most when it comes to beer making. Strawberries in particular go through quite a metamorphosis as they ferment with native yeast.
We're quite pleased with this year's results and hope you enjoy them. A lot of love went into making O&P, as we hand-processed all the strawberries in-house at Jester King.

This summer, we felt like drinking the original version of Mr. Mingo, which is simply a farmhouse ale brewed with Roselle Hibiscus.
But don't let the simplicity of the recipe and concept belie the complexity of the beer. Mr. Mingo is brewed with well water, Texas-grown barley and wheat, and fermented in stainless steel with our mixed culture brewers yeast and naturally-occurring yeast from our land. It's refreshing, effervescent, slightly herbal, mildly tart, and overall very drinkable. This feels a little surreal to write. It has certainly been a long-time coming. We first brewed Le Petit Prince Farmhouse Table Beer in 2012. We've been brewing it once or twice per year since. Originally inspired by Brasserie Dupont's table beer called Avril. We sought to make a low-alcohol beer that's dry, drinkable, refreshing, crisp, hoppy with a little bit of beguiling yeast character that only wild fermentation with native yeast can create. Le Petit Prince is probably our favorite beer we make. It's certainly the truest to our core philosophy of beer making.
After having people ask if we'd ever put it in cans for about a decade, we finally decided to. The recipe is well water from the Trinity Aquifer, Texas-grown malted barley and wheat, a blend of organic Perle and Fuggle hops from The Oregon Hophouse (both kettle and dry hops), and natural fermentation with native yeast. We always release it very fresh so the hop character is still vibrant. In this case, Le Petit Prince is a little younger and fresher than we normally release it, as the beer was force carbonated prior to canning, as opposed to our normal natural conditioning in bottles.

We're excited to announce the release of 2022 Hibernal Dichotomous! Our Dichotomous series seeks to create flavors and aromas tied to the season in which they're created using seasonal ingredients and naturally occurring yeast.
For 2022 Hibernal Dichotomous, we created a barrel-aged blend of wild beer, which included a portion aged in Mezcal barrels. We then took winter beets and fire-roasted them in-house at Jester King Kitchen. Prior to roasting the beets, we packed them in spent coffee grounds from our friends at Figure 8 Coffee Purveyors.
We love working with native yeast, seasonal ingredients, and new culinary techniques to create unique flavors and aromas. We feel we've created a beer singular to the winter season, the Texas Hill Country, and the creative prowess of our brewers and chefs to share with you. We hope you enjoy this special creation tied to time, place, and people. 5.8% abv.

To help celebrate the release of 2022 Atrial Rubicite, we're also releasing a portion of 2021 Atrial Rubicite that was aged in Balcones Distilling Bourbon barrels!
We took some of last year's World Beer Cup Gold Medal-winning Atrial Rubicite and racked it into Balcones Distilling Bourbon barrels and aged it for a year. We then blended and naturally conditioned. The 2021 Atrial Rubicite must have absorbed residual bourbon in the barrels, because the alcohol by volume about doubled during the year of aging (10.9% abv).
We hope you enjoy 2022 Balcones Distilling Bourbon Barrel-Aged Atrial Rubicite! It's the first specialty barrel-aged Atrial Rubicite we've released since Sherry-Barrel Atrial Rubcitie several years ago. Cheers!

We're excited to announce the release of Atrial Rubicite Batch 12 this Friday, July 15th! Atrial Rubicite is our barrel-aged wild ale re-fermented with raspberries. Originally released in 2013, it's our first-ever fruit beer.
When Atrial Rubicite was first released nine years ago, we wrote, "We love taking fruit that is highly aromatic and flavorful and fermenting it to dryness, so that the beer is imbued with the rich character of the fruit but is devoid of sweetness." That description still fits Atrial Rubicite to a T. Part of the magic of wild fermentation is that the fruit's explosive aromatics and deep flavor are preserved, but the sugar and sweetness are all gone. This is how we like to make fruit beer, and it has been our focus for nearly a decade.
The process behind Atrial Rubicite is simple but patient. We brew with well water, Texas-grown malted grains, and a blend of fresh and aged hops, then ferment with our mixed culture of brewers yeast and native yeast. We barrel-age for about a year, re-ferment with about seven pounds per gallon of raspberries from Washington, and then naturally condition.
We're also proud that Atrial Rubicite recently won gold in the Belgian-Style Fruit Beer category at the World Beer Cup. Atrial Rubicite also won bronze at the 2013 Great American Beer Festival.

more2022 Enigmatic Taxa
Tomorrow we're releasing a re-brew of Enigmatic Taxa, our 2017 collaboration with Perennial Artisan Ales in St. Louis, Missouri! Enigmatic Taxa is a hoppy farmhouse ale with grapefruit juice and zest added to the coolship. A portion of the grapefruits is from our friends down the road at Revolution Spirits.
The base beer is inspired by Belgian Hommel Bier. We brewed a 13 Plato wort with Llano, Texas Pilsner malt, Biscuit, Carafoam, and a touch of Abbey Malt. We kettle hopped with Columbus, Loral, Ekuanot, and aged hops. We racked the wort to our coolship for overnight chilling and added fresh grapefruit zest and juice that we hand-processed. The next morning we racked the wort to stainless steel for mixed culture fermentation with our blend of brewers yeast and native yeast from our land. After primary fermentation, we dry-hopped with Cascade, Belma, Mosaic, and X17 from The Oregon Hophouse. Unfiltered, unpasteurized, and naturally conditioned. 7.0% abv.

It was fermented in stainless steel with a pure culture of Belgian Pale Ale yeast, then dry hopped with more Hallertauer Mittelfrüh and Tettnanger hops. We're pleased to introduce Jester King Viridium — 100% spontaneously fermented beer brewed with toasted yaupon, juniper, and rosemary. All of the herbs were foraged from the land surrounding the brewery.
We first brewed a batch of Viridium in 2019, and then we brewed another batch in 2020. After the beer matured in oak barrels for two to three years, we blended it with some one-year-old spontaneous beer in our cellar. The blend was then naturally conditioned through re-fermentation in bottles and kegs. 4.9%
Viridium is somewhat reminiscent to us of Abscission — our foraged spontaneous beer brewed in collaboration with Scratch Brewing Co. in 2016.

Jester King Hazy IPA out tomorrow! The base was Texas-grown malted barley and wheat from TexMalt. We kettle hopped with Idaho 7 and Simcoe. We dry-hopped with Simcoe, Citra, Galaxy, Strata, and Nelson Sauvin. We also added an enzyme called Beta glucosidase during the early dry hopping to aid in biotransformation (i.e. the interaction of yeast and hop oils to create new flavor compounds). 6.5% abv. Today we're releasing our 2022 blend of Montmorency vs. Balaton! "MvB" is our barrel aged wild ale re-fermented with Montmorency and Balaton cherries from Michigan. 🍒 One of our running jokes at Jester King is, "What is your favorite fruit to ferment with beer, and why is it cherry?" Cherries are indeed hard to beat when it comes to fruit re-fermentation. We get delicious notes of cherry pie, cinnamon, and marzipan.

The 16th annual American Craft Beer Week is now through May 22 🍺 We have three exciting releases this week, and we're kicking things off with the re-release of Audio Palette — our spelty farmhouse ale with American hops, brewed in collaboration with Stillwater Artisanal.
For the re-release, we brewed with well water, Texas-grown 2-row barley, malted spelt, and Idaho 7. We fermented in stainless with our mixed culture and dry-hopped with Mandarina Bavaria, Huell Melon, and Cashmere. Unfiltered and naturally conditioned. 6.8% abv.

more2021 Afield Cinsaut
We're excited to announce the release of Afield — our 2021 Cinsaut wine made in collaboration with our friends at Field Recordings Winery in Paso Robles, California, and American Solera Brewery in Tulsa, Oklahoma!
For Afield, we took 100% 2021 Cinsaut grapes grown in the California Central Coast and had them undergo carbonic maceration (fermenting the grapes from the inside out using natural CO2 pressure). Interestingly, the carbonic maceration took place in transit! The grapes were sealed upon shipment to Texas, and spontaneously fermented during their journey in the presence of native yeast. After we received the grapes at Jester King, we pressed them and racked the wine to neutral oak for about four months. We then blended and bottled without the addition of any sulfites or other preservatives. Afield is just Cinsaut grapes and native yeast, nothing else. 8.8% abv.

more2021 Blanc du Bois
We're very excited to release our first wine from last year's Texas grape harvest — Jester King 2021 Blanc du Bois! Our 2021 Blanc du Bois is made from 100% Blanc du Bois grapes grown in Sulphur Bluff, east of Dallas. We received the grapes last August and fermented on skins for about a month, yielding an orange wine. Fermentation was started by pitching our mixed culture — the same one we use to ferment our farmhouse beer. We then pressed the grapes and aged the wine in neutral oak barrels for about five months. Finally, we blended and bottled without the addition of any sulfites or other preservatives. Our 2021 Blanc du Bois is just grapes and our mixed culture — nothing else added or removed.
We love the fruity, tropical character of Blanc du Bois and have been using it for years in our beer. We're really excited to have finally made wine with it. Blanc du Bois is a hybrid grape developed in Florida. It does well in our hot Texas climate and is resistant to Pierce's Disease. By no means a sparkling wine, expect a little bit of natural carbonation in the bottle through continued refermentation. 9.2% abv.
As we mentioned, this is our first wine from the 2021 harvest. This is also from our second year of making wine, with 2020 being our first year. As a refresher, it became legal in 2019 for us to make wine and beer under the same roof at Jester King. Natural winemaking in our experience has many similarities to making barrel-aged beer refermented with fruit, so we were eager to start a wine program at Jester King. Our own vineyard is about four years old and is slowly maturing, with the goal of making estate wine at Jester King in the years ahead.

We created a soft, mellow blend and re-fermented with Texas Fuyu Persimmons grown in Mexia, Texas to the east of Waco. We then added Japanese Red Shiso before bottling.
SPON Shiso & Fuyu Persimmon is bright, refreshing, and tangy with a subtle earthiness from the Shiso. 100% spontaneously fermented with native yeast and naturally conditioned. 6.0% abv.

Batch two of Citrus Foot Direct out now! This is our Farmhouse IPA fermented with Oranges and Mandarin.
To make Citrus Froot Direct, we mashed with well water and a base of Wildfire Pale Malt and San Jacinto 2-Row from TexMalt. We kettle hopped with Idaho 7 and dry hopped with Simcoe, El Dorado, and more Idaho 7. We fermented in stainless steel with our mixed culture. During fermentation we added juice and zest from oranges and mandarins hand-processed by our brewing team. Naturally conditioned. 6.7% abv.

We're excited to simultaneously release two new SPON beers — 2022 SPON Raspberry & Cherry and 2022 Blackberry & Cherry! Both are a blend of mature, barrel-fermented 100% spontaneously fermented beer. Following a few years of maturation and blending, we refermented the blends with raspberries and cherries and blackberries and cherries respectively.
Stemming back to our love and appreciation of authentic-Belgian Lambic, as well as aged hops, we consider SPON to be a wonderful base for fruit fermentation. It's also hard to go wrong with adding copious amounts of raspberries, blackberries, and cherries to the beer. We hope you enjoy these two classically-inspired fruit beers from Jester King!

We're excited to announce the release of Jester King Ordinary Bitter! We love English-style beers. Like, really love them. We will not travel to Denver without visiting Hogshead Brewery or Seattle without visiting Machine House Brewery. We're lucky and grateful to have Acopon Brewing Co. making delicious English-style beers down the road from us. We've relished the opportunities we've had in the past to visit Manchester, England and experience English beers from their home.
Although our main inspiration at Jester King is Franco-Belgian, we've dabbled in the English tradition over the years. Our first beer release, was Commercial Suicide, our English-style Dark Mild Ale. We've also made beers such as Black Metal (English-style Imperial Stout) and Meowsonry! (Farmhouse Best Bitter). Why do we love them so much? We'd same it comes down to the elegant balance of toasty malt, herbal bitterness, and subtle dark fruit fermentation character, as well as the incredible session-ability, which lends to memorable experiences with friends and loved ones.
For Jester King Ordinary Bitter, we brewed a low-gravity wort with Golden Promise, dark crystal, and biscuit malts, a touch of flaked barley, and East Kent Goldings hops. We fermented in stainless steel with West Yorkshire Ale yeast, and packaged in kegs and cans. 3.5% abv.
moreBlueberry Wine
We're excited to release this year's batch of Jester King Blueberry Wine! This wine is 100% blueberries fermented with our house mixed culture. We don't add anything else but blueberries and yeast.
After the crush, we did primary fermentation in stainless steel, then pressed and racked to neutral oak for six months. We blended and packaged the wine still. 7.9% abv.
This year, the blueberries came from Michigan instead of Texas. The 2021 Texas freeze severely reduced the quantity of blueberries we were able to get from Texas growers. The Texas-grown ones we were able to get went to Colour Five and Recented, our collaboration with Pinthouse. We hope you enjoy our latest wine from Jester King! More to come...

Happy National Beer Day! In honor of this holiday, we’re sharing the recipe for Jester King 分 桃 (Fēn Táo) — Barrel-Aged Wild Ale refermented with Texas Hill Country peaches. We've been making this beer for around 7 years and it's one of our favorites. We love the character of Texas Hill Country peaches expressed through wild fermentation. It's a relatively simple recipe and process too. Good ingredients and patience combine to create a delicious beer with this recipe. Enjoy!

We like to show off the terroir of our own Trinity Aquifer well water at Jester King. We recommend going with your own unique water profile, even if it's municipal water. Carbon filtration for municipal water is recommended, but we'd recommend rolling with the mineral profile "as is".

Primary fermentation was in stainless steel with our mixed culture, followed by fruit re-fermentation with blackberries, and 100% natural conditioning. 5.3% abv.

Introducing St. Elmo Brewing Co. / Jester King Brewery Koelschip Kölsch!
We love crispy beers. We love coolships. We love collaborating with talented brewers, especially when they're local friends. All of these things come together in Koelschip Kölsch!
We first drank authentic German Kölsch when we traveled to Cologne in 2012 to collaborate with Freigeist Bierkultur and our friend Sebastian Sauer, with whom we made Sauer Power and Sing•along Deathmatch. We were totally hooked from the start. A few years later, our friends at St. Elmo Brewing Co. started making Carl, a tasty, crispy Kölsch with beautiful malt character. It rocketed up our list of favorite local beers. When it came time to collaborate with St. Elmo, we were excited to do a riff on Carl with them.
Since it was coolship season, we decided to brew a Kölsch with a base of TexMalt Llano Pilsner Malt and Saphir hops, then rack the wort to our coolship at Jester King for primary fermentation. We cooled in-line through our heat exchanger going from kettle to coolship. The coolship functioned as a large, shallow open fermenter, rather than a cooling vessel. We pitched Kölsch yeast at knockout into the coolship. After high krausen in the coolship, the remainder of primary fermentation and lagering was done in stainless steel.
moreBlackened Skies
We're excited to introduce Blackened Skies, our latest collaboration with our friends at Weathered Souls in San Antonio! Blackened Skies is a blend of two-year-old spontaneously fermented stout, whisky barrel-aged Imperial Porter, and Imperial Stout from Weathered Souls.
On a winter night about two years ago, we were joined by Weathered Souls Co-Founder Marcus Baskerville for a coolship brew. We brewed a medium gravity wort with Texas pilsner malt, raw wheat, brown malt, chocolate malt, and aged hops. We chilled the wort overnight in our coolship and spontaneously fermented it in oak barrels. After two years of maturation, we blended with spontaneous stout with Wild Imperial Porter aged in Balcones Baby Blue Texas Corn Whisky barrels, as well as some Imperial Stout from Weathered Souls. We naturally conditioned the blend in kegs and 750ml bottles. 7.5% abv.

The Pilz wort is brewed at Live Oak and driven across town to Jester King for fermentation. This simple, crushable beer maintains much of the Live Oak Pilz character when young and fresh, then goes through a mixed culture metamorphosis in the bottle as it ages. 6.0% abv.

We're happy to release RU55 Batch 9! RU55 is our barrel-aged Flanders-style red ale. About two years ago we brewed a wort with pilsner and caramel malt and barrel aged it. After about 24 months maturation, we blended and naturally conditioned. We like to keep our barrel-aged blends nice, soft, and mellow, which is what we did for RU55 Batch 9. Smooth and mellow with a nice dark fruit, caramel, leathery character, and a gorgeous copper/red color is what time, patience, and blending created. We're happy to have this JK original back! 6.7% abv.

moreSparkling Cherry Wine
Our first wine release of the new year is here — Jester King 2022 Sparkling Cherry Wine!
Our Sparkling Cherry Wine is a blend of 50% Balaton and 50% Montmorency cherries from Michigan. We fermented the cherries with our house mixed culture last May, then aged the wine in oak barrels for seven months. We then naturally conditioned the wine through refermentation in the bottle. No additives, preservatives, adjunct ingredients, or anything else. Just fruit, yeast, and time. 5.5% abv.
This cherry wine is a lot of fun. Despite the very simple process, the flavors and aromatics leap out of the glass. We got bold aromas of cherry pie and marzipan. It finished around zero Plato, so it's fully fermented and dry. We hope you enjoy the first Jester King wine of 2022. More to come!

more2021 SPON Touriga Nacional & 2021 SPON Chenin Blanc
Our first SPON release this year is a dual one — 2021 SPON Touriga Nacional and 2021 SPON Chenin Blanc!
Both beers are two-year-old blends of spontaneously fermented beer re-fermented with Central Coast grapes. 2021 SPON Touriga Nacional is 10.4% abv and is very juicy and fruit forward. The mature SPON serves as a nice backdrop to the 2021 fruit, which is still presenting fruity and vibrant. 2021 SPON Chenin Blanc is 8.1% abv and is quite mineral forward. The Gueuze-like character of the base SPON base beer melds wonderfully with the minerality in our opinion.

2022 Snörkel
We're excited to release our latest batch of Snörkel — farmhouse ale brewed with alderwood smoked sea salt and oyster mushrooms. For this batch, we used golden oyster mushrooms grown by Smallhold in Austin. We added both the mushrooms and smoked sea salt hot side during the boil. Aside from the adjunct ingredients, we kept it pretty simple with this dry, drinkable farmhouse ale. Unfiltered, unpasteurized, naturally conditioned. 5.5% abv.

Introducing Chamango! This beer is inspired by the Mexican drink Mangonada or Chamango. It was brewed with tamarind, barrel-aged for over a year, re-fermented with mangos, then finished with additions of chamoy and Tajín. We get a nice mix of savory spice and tropical fruit character in a beer we find layered but quite drinkable. 7.6% abv.
A portion of the proceeds will be donated to Inclusive Action, which seeks to "bring people together to build strong, local economies that uplift low-income urban communities through advocacy and transformative economic development initiatives."

For Doom Forge Day next Sunday, February 20th, we're excited to release Maple Bourbon Barrel Aged Nocturn Serenade!
Last year, we brewed an imperial stout re-fermented with blackberries called Nocturn Serenade. We then aged the beer for 13 months in maple syrup bourbon barrels. The results are quite vinous and remind us of port wine. Naturally conditioned in kegs in 750ml "genie" bottles. 12.3% abv.

moreIntroducing hemp CBD prerolls from our farm
Introducing hemp CBD prerolls from the Jester King farm! They're filled with estate-grown hemp, lavender, and prairie sage and will usher you into a calm and relaxing state. Our hemp contains less than .3% THC. Now available at the Jester King shop in the Pole Barn.
Our prerolls come from our hemp plants that were grown in our permanent beds and fed only well water and goat manure on the Jester King farm. Shout-out to Emjayze for helping us stuff the prerolls.
A quick history on cannabis laws in Texas...prior to 1973, Texas had the harshest cannabis laws of any state in the nation, with possession of any amount classified as a felony offense punishable by two years to life in prison. In June 2019, House Bill 1325 was signed into law by Governor Abbott to legalize the cultivation of industrial hemp (cannabis containing less than 0.3% THC). This was the first time hemp was able to be farmed in Texas in 80+ years.
We took advantage of this bill to grow our first crop. We used it to make our hemp balm, which was released in April 2021. At this time, manufacturing hemp to be smoked was strictly prohibited. One year later, on August 5, 2021, an appeal was issued to allow farmers to manufacture smokable hemp.

A Pale Green Horse Kveik India Pale Ale is here! Brewed in collaboration with our great friends at Yazoo Brewing Company in Nashville, Tennessee. A Pale Green Horse is one of our personal favorites. We brewed it with a base of Wildfire Pale Malt and San Jacinto 2-Row from TexMalt, raw wheat, flaked oats, and El Dorado and Idaho 7 hops. We then dry-hopped at 4# per bbl with Strata and Sabro Cryo. 7.8% abv.

more2022 Vague Recollection
Our latest batch of Vague Recollection is now available! Inspired by the winemaking tradition of piquette, Vague Recollection is a farmhouse ale aged on the grape pomace from the 2021 harvest.
2021 was our second season of winemaking. We worked with Blanc du Bois, Syrah, Merlot, and Black Spanish grapes. After pressing the skins, we racked young farmhouse ale onto the pomace. After a few months of aging, we racked the beer off of the pomace and naturally conditioned the beer. The result is an elegant, complex, nuanced flavor profile that captures elements from both beer and wine. While by no means a fruit bomb, this batch is very drinkable and delicious. We're quite excited to release it. 6.8% abv.

We could not foster these relationships without the people who work tirelessly every week at Jester King, from the front of house to our kitchen, our production team to our artists, and many more. With this in mind, we continue our Jester King staff spotlight series so you can get to know our team. This week meet one of our brewers, Marc Nelipovich!Marc is a native Texan from Houston. He’s been brewing at Jester King for over eight years. While not at work, Marc plays music and creates art. You may have seen Marc playing drums at Jester King with the band Moving Blues (aka El Michael and the Moving Blues) or seen his art residing in the Blue Sky Art on Wheels trailer at the entrance of the brewery.

Doom Forge Day is back! Join us on Sunday, February 20th from 11am-9pm (kitchen closes at 8pm) for an event most brutal, where we celebrate all things metal.

We'll also have a guided beer & food tasting with Marcus Baskerville of Weathered Souls Brewing in San Antonio (ticketed) at The Hall at Jester King. Marcus will provide insight into his passion for imperial stouts and the process behind these big and bold malt bombs. We'll also be serving up sweet desserts from the Jester King Bakery. We're excited to release our latest batch of Munich-Style Helles Lager! It's brewed with softened Hill Country well water, 100% Weyermann Floor-Malted Pilsner, and Hallertau Mittelfruh. Fermented with Augustiner yeast and lagered for eight weeks in our new horizontal lager tanks. Filtered and packaged in kegs and 16oz. cans. 4.8% abv.
We find our Munich-Style Helles Lager highly refined, slightly malt forward, super-crisp, and eminently drinkable. Great for enjoying onsite amongst the rustic vibe and natural beauty of Jester King or at home with friends and family.
