We're pleased to introduce Jester King Barrel Aged Wild Ale with Jambolan Plums!

Finding interesting Texas fruits and fermenting them with our beer is perhaps our favorite thing to do at Jester King. In this case, we found a new fruit we'd never worked with before grown in southern Texas -- Jambolan plums! Native to India, Burma, Ceylon and the Andaman Islands, the Jambolan plums we worked with were grown at Paradise Gardens in Los Fresnos, Texas.

We took mature barrel aged wild ale and refermented it with Jambolan plums at around 2-3 pounds per gallon. Once the fruit refermentation reached total dryness, we naturally conditioned the beer in bottles and kegs (6.6% abv). The plums deliver quite a unique flavor and aroma! We get a lovely mix of jammy, seedy, wintergreen, and sloe gin character.

We're excited to introduce Jester King Nocturne Serenade -- Imperial Stout Refermented with Blackberries!

Nocturne Serenade is our second Imperial Stout refermented with fruit following Black Atrial earlier this year. We brewed a high gravity wort with Maris Otter, double roasted crystal, chocolate malt, oats, and wheat, then fermented in stainless steel with English ale yeast. We then refermented Marion blackberries with the beer at a rate of around 3 pounds per gallon! The result is a highly decadent fruit stout bursting with blackberry and dark chocolate flavors. 7.0% abv.

Nocturne Serenade will be released today (Wed. 12/16) at Jester King when we open at 3pm CST. Please note! Nocturne Serenade will be available by the glass and in 32oz. crowlers. The naturally conditioned bottles of beer got a little too lively, so we're pouring them onsite by the glass.

Today we're releasing batch 2 of our Dry-Hopped Oat Saison with Desert Yeast!

Our desert yeast series features native yeast strains captured in the West Texas high desert by our friends at Community Cultures Yeast Lab in San Antonio. For batch 2, the yeast was foraged from a salvia plant high in the Chisos Mountains near Big Bend National Park.

We took the desert yeast and pitched it in a wort brewed with well water, San Jacinto 2-Row, Denton County Wheat, and malted oats from TexMalt in Fort Worth, and Amarillo, Simcoe, and Cascade hops. We dry-hopped the beer during fermentation with Ekuanot and Cascade, then dry-hopped it repeatedly with Nelson Sauvin and Ekuanot cryo. The Nelson Sauvin combined with the fruitiness from the desert yeast creates a beautiful tropical fruit nose.

Fermented in stainless steel. Packaged in kegs and 16oz. cans on Thursday, December 10th. It's 6.7% abv. Very hoppy, so drink fresh!

Today at 3pm CST we're excited to release 2020 SPON Three Year Blend!

SPON Three Year Blend is 100% spontaneously fermented beer inspired by authentic Belgian Gueuze. It's a blend of three different "vintages" of beer -- in this case beer from 2019, 2018, and 2017 coolship seasons. 2020 is our 5th three year blend following our 2016 to 2019 releases.

To create SPON, we combine unfiltered well water from the Trinity Aquifer and Texas-grown malted barley and raw wheat in a turbid mash. We boil the wort for four hours with aged hops from the attic of our barn. We then chill the wort overnight in our coolship to collect native yeast from the air. The next morning we fill oak barrels and allow the beer to spontaneously ferment without pitching any yeast. After one to three years of maturation, we finally create our three-year blend and naturally condition it through fermentation in bottles and kegs. We follow a very traditional recipe and process, but ultimately create a beer uniquely tied to the terroir of the Texas Hill Country.

We're pleased to celebrate ten years of Jester King having first begun brewing in 2010! In recognition of our 10th anniversary, we're releasing two new beers as an ode to our past and present -- a DDH IPA and a Dry-Hopped Farmhouse Ale with Triticale & Oats! Both our anniversary beers are now available to go and to enjoy onsite at Jester King.

Our 10th-anniversary DDH IPA is dry-hopped with Idaho 7 cryo, Citra, and El Dorado at a rate of 4 pounds per barrel. It's 6.8% ABV and represents our new experimentation in 2020 with pure culture fermentation. Our 10th-anniversary Dry-Hopped Farmhouse Ale is brewed with well water, 100% Texas malt (malted barley, oats, and triticale from our friends at TexMalt in Fort Worth), and East Kent Golding, Fuggle, and Perle hops. It's 5.8% ABV and represents a decade worth of brewing based on local sourcing of ingredients, wild fermentation with native yeast, and pursuing a sense of time, place, and people in beer.

Today at 3pm CST we're releasing our Blackberry Grisette! It's the latest in our lineup of fruited grisettes. These are highly drinkable, session-strength farmhouse ales with great texture, balanced fermentation character, and moderate fruit intensity. They are very much designed to be beers for drinking.

Blackberry Grisette was brewed with well water, Blacklands White Horn Pilsner malt, malted wheat, flaked oats, and a blend of fresh and aged hops. It was fermented with our mixed culture in stainless steel and refermented at a ratio of 1.25 pounds per gallon with Marion blackberries. Unfiltered, unpasteurized, and 100% naturally conditioned through rerfermentation in the bottle or keg. 5.8% abv.

SPON Day is traditionally when we release our annual three year blend of spontaneously fermented beer, feature some of our favorite spontaneously fermented beers and wines, and celebrate the holiday season. As our service model at Jester King Brewery & Kitchen has changed significantly this year to ensure a safe and positive experience for our guests, we are expanding to five days of SPON!

The 2020 SPON Three Year Blend will be released on Wednesday, December 9, 2020, and will be available while supplies last by the glass onsite and in bottles to take home.

The 2020 SPON Three Year Blend is our fifth "vintage", and is a blend of 100% spontaneously fermented beer from 2019, 2018, and 2017. We've been pursuing spontaneous fermentation at Jester King since February of 2013, and we're excited to begin our ninth winter of spontaneous fermentation soon.

We're happy to release a new beer today called Hominimania -- a pale lager brewed with hominy (corn that has been nixtamalized)!

We've been really interested in corn as a brewing ingredient for some time now, and we wanted to experiment with nixtamalized corn. Nixtamalization involves soaking the dried corn kernels in a lye solution to soften them. Once softened, the kernels can be ground to make grits or masa flour. In our case, we added the nixtamalized corn to our mash!

We sourced Texas-grown Hickory King White Corn from our friends at TexMalt in Fort Worth. TexMalt was gracious enough to nixtamalize the corn for us prior to brewing, so in essence, this beer is very much a collaboration with TexMalt.

We're really intrigued by the results! While still crisp, hoppy, dry, and drinkable like a pale lager, there's an unmistakable masa flour character to the beer, which makes us feel like we've done justice to hominy.

Hominimania was lagered for five weeks prior to release. It's 5.1% abv and fermented with German lager yeast from our friends at Community Cultures Yeast Lab in San Antonio. It will be released today at 3pm CST at Jester King when our curbside pickup opens. Today we're releasing a new farmhouse ale refermented with four different types of Texas summer melons -- Watermelon, Casaba melon, Santa Claus melon, and Sugar Kiss melon!

Back in August of this year, we received a wonderful harvest of Texas melons at Jester King. We took the local melons and hand-processed them in-house. The melons were highly aromatic and flavorful and were among some of the best we've worked with. We then took the melons, added them to fresh farmhouse ale, and let them ferment to total dryness. Our goal was to take beautiful, seasonal fruit we're quite fond of, treat it in a very simple, straightforward manner, yet produce results that are unique and dynamic through the "magic" of wild fermentation with native yeast.

Farmhouse Ale Refermented with Texas Summer Melons was brewed in August with well water, malted barley, malted oats, wheat, and hops. It was fermented in stainless steel with our mixed culture, and refermented with the summer melons. It's 5.8% alcohol by volume, unfiltered, unpasteurized, and 100% naturally conditioned.

We're pleased and excited to bring back Space Waves -- our collaboration with Jolly Pumpkin Artisan Ales!

Space Waves is a farmhouse ale with cherries, lime juice, and lime zest, originally brewed in 2016. For batch 2, we brewed with well water, White Horn Pilsner malt from Blacklands, flaked oats from TexMalt, and Mandarina Bavaria hops. We added two pounds per gallon of Montmorency and Balaton cherries and 400 pounds of limes (juiced and zested) to the fermentation. For batch 2, we upped the quantity of the cherries and limes from batch 1, as well as decided to forgo the salt addition. Unfiltered, unpasteurized, and 100% naturally conditioned. 4.8% abv.

Today we're pleased to release our next fruited Grisette! Our latest is with Montmorency and Balaton cherries! We added equal parts of each variety to Grisette-style beer at a ratio of about 1.25 pounds per gallon. Our goal was to make a very drinkable beer, low in acidity, with present but not overwhelming fruit character. With an emphasis on balance and drinkability, we primary-fermented the Grisette in stainless steel for a few weeks, then added the cherries for secondary fermentation in stainless as well. Our intent is for our fruited-Grisettes to be enjoyed fresh, while the fruit character is still vibrant and the fermentation character is "clean".

Cherry Grisette is 5.3% abv. It's unfiltered, unpasteurized, and 100% naturally conditioned. It's available for online ordering and pickup at Jester King now. We're pleased to release 2020 SPON Muscat! SPON Muscat is 100% spontaneously fermented beer aged in oak barrels for one to three years refermented with Texas-grown Muscat grapes. We let the unfermented beer rest overnight in our coolship, then 100% spontaneously ferment with native yeast. Our goal is to capture the terroir of the Texas Hill Country through the "magic" of spontaneous fermentation.

Muscat is one of our favorite grapes to work with. It imparts a honeysuckle, cotton candy, elderflower, tropical fruit character we're quite fond of. We added the crushed grapes to a mature blend of SPON, then let it ferment to total dryness. Unfiltered, unpasteurized, and 100% naturally conditioned. 7.3% abv.

We're pleased to release Blacklands Helles Munich-style Lager -- brewed in collaboration with our friends at Blacklands Malt in celebration of their 7th anniversary! It was seven years ago that Blacklands brought local, craft malt to Texas. In celebration of their pioneering effort, we brewed a Helles with 100% White Horn Pilsner Malt with Blacklands. We found this fitting, as White Horn Pilsner was Blackland's first batch of malt.

Blacklands Helles was single-decoction brewed in August with softened Hill Country well water, White Horn Pilsner Malt, and Tettnang, Hallertauer Mittelfrueh, and Spalter Select hops. It was fermented with lager yeast from Community Cultures Yeast Lab, then lagered for five weeks. Clean, crisp, fairly hoppy, and very drinkable. 4.8% abv.

Nearly one hundred runners participated in the Black is Beautiful 5K Fun Run co-presented by Jester King, Beer Garden Run, and Marvis Dixon on Saturday, October 17th. In the interest of health and safety on our trails, masked runners took to the course in physically distanced waves of ten. Participants were encouraged to time themselves rather than compete against others. Check out the photo gallery by Granger Coats below for highlights, as well as Kim Dalbert's Instagram images of the event.

In conjunction with the Black is Beautiful 5K Fun Run, Jester King is hosting an online auction for various packaged experiences. Packages include a weekend stay at the Tipping T Inn, wine tasting for two at Jester King, run with our goats and more!

Today we're releasing our latest co-ferment, which features Texas-grown Lomanto grapes!

For our co-ferments, we combine massive quantities of fruit with wort (unfermented beer) and let them ferment together to total dryness through mixed culture fermentation. In this case, we chose a grape that's new to us called Lomanto. Lomanto is a hybrid of Salado and Pense grapes. It's drought and heat tolerant, and delivers "fruity, jammy flavor and make(s) intensely colored jelly and wine." The color is indeed quite intense. You can see from our photos just how intensely purple Lomanto grapes are.

For Farmhouse Ale Co-Fermented with Lomanto, the result was so intensely fruity, jammy, and wine-like, we decided to bottle it still (7.9% ABV). There's a small amount of fizz through residual bottle fermentation. The intense fruit character is complemented by a nice, complex layer of funk from wild fermentation. This co-ferment is indeed bold, wild, and raw! We love it, and think you will too!

Today at Noon Central we're releasing Cerveza de Tempranillo Blend 4! Cerveza de Tempranillo is barrel-aged wild ale refermented with Tempranillo grapes from the 2020 harvest!

We received the Tempranillo grapes back in August during the heart of the Texas summer. Tempranillo grapes are primarily grown in Spain and Portugal. They're a black grape with thicker skins that can thrive in warmer climates with less precipitation. We've become fans over the years of Tempranillos rich color and flavor. They're one of our favorite grapes to work with.

The Tempranillo grape for our blend 4 were growing in Sulphur Bluff, Texas about 100 miles east of Dallas. We crushed and destemmed the grapes, placed them in a stainless steel fermenter, then added mature, barrel-aged wild beer from our cellar. The ratio of fruit to beer was quite high as is usually the case for our fruit refermentations. We'd estimate the fruit to beer ratios is around 9 pounds per gallon. We then let the grapes and beer ferment to total dryness. The blend was then naturally conditioned through 100% bottle refermentation. No preservatives or additives. Unfiltered and unpasteurized. A true representation of Hill Country wild beer and native Tempranillo grapes, transformed through the "magic" of wild fermentation. 10.5% alcohol by volume.

Today at Noon central we're releasing I Voted Today DDH American Pale Ale! Our I Voted Today beer is part of a nationwide voter awareness initiative led by Tired Hands Brewing Company in Ardmore, Pennsylvania. A portion of the proceeds from Jester King I Voted Today will go to Jolt Initiative, a non-partisan, non-profit, statewide organization in Texas working to increase the civic participation of Latinos to build a stronger democracy and ensure that everyone’s voice is heard.

I Voted Today was brewed with Blacklands Malt Silver Star Two Row, Malted Oats from Texmalt, Centennial, Amarillo, and Simcoe. It was double dry-hopped with more Centennial, Amarillo, and Simcoe, as well as Centennial and Simcoe Cryo. We get classic dank, piney, citrusy APA character with a firm, rounded bitterness. 5.9% ABV and canned on October 2nd, 2020.

Through volunteerism with our JK Volunteer Corps and charitable giving via our Noble Cause program, we routinely raise funds and awareness for community causes. We and our supporters have contributed funds and volunteer hours for the Central Texas Food Bank, Casa Marianella, Integral Health Austin, Jolt Initiative, Hill Country Ride for AIDS, Urban Roots, AGE of Central Texas, Hill Country Conservancy, Pink Boots Society, and many other nonprofits.

We're pleased to release Nocturn Chrysalis Batch 7! Nocturn Chrysalis is our barrel-aged wild ale refermented with six pounds per gallon of Marion Blackberries!

We blended mature beer aged in oak barrels with native yeast, added the blackberries, then let the fruit referment to total dryness. We then naturally conditioned the beer through refermentation in bottles and kegs.

We're quite happy with how our 7th batch of Nocturn Chrysalis turned out. It's very fruit-forward, wine-like, well-integrated, and drinkable. We think it will be greatly enjoyed!

Nocturn Chrysalis Batch 7 is now available to go at Jester King 7 days a week from 12-8pm. Here's the link to order: https://www.toasttab.com/jesterkingbrewery/v3. We have about 1,500 bottles (750ml/$35) with a bottle limit of 6 per guest per day. Proxies welcome (please designate). We don't foresee Nocturn Chrysalis Batch 7 being distributed.
