Jester King Introduces Barbecue

At Jester King, we make food & drink uniquely tied to a time, place, and people. As many of you know, Texas proudly touts itself as the best brisket producing state (Franklin, Snow’s, Leroy and Lewis, etc.) and with roots in Central Texas, we couldn’t wait any longer to introduce BBQ to our menu. We’re now offering a full BBQ menu, complete with ribs, brisket, pulled pork, and more. Developed by Executive Chef Mason Huffman and the Jester King crew, our new BBQ menu was created to broaden the scope of our offerings by providing a wider variety of items to our patrons. We’ve also added delicious bakery components to the BBQ lineup created by Head Baker Jacob Zavala.

BBQ Mains:

  • St. Louis Pork Ribs

    • ½ lb St. Louis pork ribs, dry brined, and spiced brown sugar glaze (contains fish sauce).

  • Smoked Brisket

    • ½ lb sliced mesquite smoked brisket and BBQ sauce.

  • BBQ Pulled Pork Sandwich

    • Parmesan brioche bun (baked in house), smoked pulled pork, housemade vinegar bbq sauce, vacuum pickled pears, mustard seed slaw, and jalapeno aioli (not spicy).

  • Chopped Brisket Sandwich

    • Chopped certified angus beef, spiced sautéed onions and poblanos, and house queso on a house parmesan brioche bun.

  • House-Smoked Half Chicken

    • Smoked half-chicken, house pickles and BBQ sauce.

BBQ Sides:

  • Japanese Milk Bread Rolls

    • Japanese milk bread rolls, very fluffy and airy.

  • Mac N Cheese

    • House made fontina and cheddar American cheese with elbow noodles.

  • Pickled Mustard Seed Slaw

    • Pickled mustard seed, apple vinegar, celery seed, and honey (dairy free).

  • Meaty Pork Beans

    • Slow cooked, stew-like pinto beans, smoked rib meat, and spices.

  • Pickles & Onions

    • Two pickle spears and some white onion slices for all your BBQ fixin' needs.

  • Housemade BBQ Sauce

    • Housemade BBQ sauce. ‘Nuff said.

We have a new, state-of-the-art 1,000 gallon custom smoker made by Cannon Pits and Fabrication, which is where meats and vegetables are smoked to the perfect tenderness and flavor on mesquite and post oak. We decided to have the smoker built on an enclosed trailer in order to be able to adapt to new opportunities in the future, which might entail off-site smokes...stay tuned!
