Today we're releasing 2019 Autumnal Dichotomous -- a barrel aged wild ale co-fermented with Texas apples and grapes!
This was a fun (if not labor intensive) beer to make. Last fall, we got in a beautiful shipment of Red Cortland, Winesap, Fuji and Arkansas Black apples from Sweet Ruthie's River Ranch in Canadian, Texas. We took the apples, put them through a grinder, pressed the juice, spontaneously co-fermented the apple juice and wort, then barrel aged it. A few months later, we blended the beer/cider hybrid with a few barrels of a beer/wine hybrid (a co-fermentation of wort and Texas Cab Franc grapes). We then naturally conditioned this unique blend of spontaneously fermented beer, wine, and cider.
The finished blend captures and integrates the character of naturally fermented beer, cider, and wine quite nicely. We're really proud of this blend, and have been drinking it copiously. We think you'll dig it too :) Expect lots of sweet fruit and berry notes (especially strawberry), rose wine, flower petals, and bright, soft acidity.
