We're excited to announce the release of 2019 Hibernal Dichotomous -- a farmhouse ale brewed with green cardamom and refermented with beets and carrots that were roasted and charred in the wood ovens at Jester King Kitchen!
Our Dichotomous beers are a product of the season in which they are created. Rather than being brewed "for a season", we think of them as being "of a season." They often come out months after the time of year in which they are created. For instance, our 2019 Hibernal (winter) Dichotomous was released this spring.
For 2019 Hibernal Dichotomous, we turned to roasted/charred root vegetables and green cardamom to evoke the earthy, rustic character of winter. We're quite proud of the result, having created a beer that we believe is quite complex and drinkable. 2019 Hibernal Dichotomous is also one of the first opportunities we've had to work directly with our kitchen. The creative minds of our culinary team coupled with their depth of knowledge when it comes to process and technique has yielded and will continue to yield some exciting results!
2019 Hibernal Dichotomous was brewed in January and packaged in March of this year. It's 5.8% alcohol by volume. It is now available at Jester King Kitchen and Jester King Brewery by the glass and in bottles to go ($14/750ml). We have about 2,000 bottles available. There's no bottle limit.
